Give P's a Chance

In the wake of the election, you may find yourself stress eating, or craving comfort food.  I know I have that tendency.  While things may seem bleak, there is always hope - and while ice cream may seen like a good dinner plan, I assure you this 3P pesto is a better option.  Spread it on crackers, or slather on bread with a grilled portobello or roasted red peppers for a hearty sandwich... and enjoy some P's (as well as omegas, protein, and fiber galore!) and quiet.

Pea, Pistachio, and Parsley Pesto

  • 3 cups frozen peas (thawed)
  • 1 cup pistachios (no shells please)
  • 1 cup roughly chopped parsley
  • Juice of one lemon
  • 9 TBS olive oil (or get super awesome and use pistachio oil!)
  • 2-3 cloves of garlic
  • Salt and pepper to taste 

Put all ingredients in a food processor and blend until smooth.  If it seems dry, add one tablespoon of water at a time until desired consistency is reached.  Eat, and enjoy a moment of P's.  :)
